Lentil Herb Soup

 

2 slices BACON(turkey) or 2 tbsp OLIVE OIL
1 1/2 cup each: ONION & CARROTS(sub-green onions, bell peppers and potato)
4 cloves fresh GARLIC, peeled andDiamond Fitness chopped
1 can (14 oz) DICED TOMATO WITH JUICE(sub Ro-Tel tomatoes)
1 bag LENTILS
1 tsp ITALIAN HERB BLEND
8 cups HOT WATER or CHICKEN BROTH

Fry bacon, drain on paper towel and set aside.  Discard all but 2 tbsp of bacon fat or use olive oil in a soup pot over medium high for 2 minutes and add onions, carrots(potato)and garlic.  Stir fry the mixture until onions are golden brown.  Add diced tomato(Ro-Tel), lentils and Italian seasoning. Bring the lentil mixture to a boil. Reduce heat to low, cover and simmer 35 minutes or until lentils are tender.  Season to taste with salt and pepper. Add crisp bacon is desired(which I did). Serve immediately or refrigerate over night.  Freezes well.
